Homogenized Milk - Not the same as Whole Milk

Most people use the terms whole milk and homogenized milk interchangeably but they are different. If you drink milk you should buy whole non-homogenized organic milk when possible. I just bought some from Avalon and they call it organic "Old Fashion Standard"

Milk has a heavier cream content as well as a lighter milk content. It naturally separates and the cream rises to the top. In the 20th century they decided it was a good idea to come up with a process (homogenization) that initially removes the fat and then adds back the amount desired - that's how they make 1%, 2% & 3.5%. This process also ensured the fat is mixed (emulsified) in and there was no need to scrape the cream off the top or shake the milk. There is concern that this process makes it difficult for our body to digest and it may cause artery issues. It's best to buy non-homogenized organic milk as it has been through one less process keeping it closer to it's natural state.
